The coffees that are utilized in our blends have origins in various coffee producing regions representative of the best quality coffees in El Salvador. The coffee is hand picked and separated at the mill according to its properties and stored in order to guarantee a better color and cup. It is hulled just days before it is to be shipped in order to conserve its unique characteristics. The coffee undergoes a rigorous quality control process beginning with its reception in cherry, visual checks during the wet process, cupping parchment before entering warehouse, cupping before hulling, and before shipping. A representative sample is stored at the laboratory of every shipment sent throughout the year.
